Organic Breakfast that they’ll beg for again and again!
I know a gal that likes to do orange rolls every holiday for breakfast with her family. So this Halloween I decided to start a new tradition with our family, because although I love my husband’s pancakes – I wanted something easy for us so that we can enjoy the morning together. This is a sweet and custardy breakfast bake for breakfast or brunch. You go and assemble it the night before, so pulling together a delicious breakfast for your family Halloween morning is quick and easy.
Ingredients
1 (12-ounce) day-old sprouted grain brad, cut into 1/2-inch cubes
1 pint organic blueberries, divided
12 ounces Organic Valley Neufchâtel or regular Organic Valley Cream cheese, softened – you decide the fat content ![]()
1/2 cup wildflower honey
8 pastured eggs
1 cup Organic Valley sour cream
1 teaspoon organic corn-free vanilla extract
1/2 teaspoon ground organic cinnamon
2/3 cup rice or hemp milk
Organic Pure Maple syrup (optional)
Directions
Place half of the bread cubes in a greased 9- x 13-inch baking dish. Sprinkle with blueberries, reserving a few for garnish. In your medium or large mixing bowl, beat cheese and honey until smooth. Then beat in the pastured eggs, sour cream, vanilla and the cinnamon. Then gradually add rice milk until blended. Pour half over bread. Spread the rest of the remaining bread on top and then add the remaining cheese mixture. Cover and chill overnight or up to 24 hours.
Remove from your refrigerator about 30 minutes before baking. Cover and bake at 350ºF about 30 minutes. Then take off the foil and bake for about 25 minutes longer. When a knife can be inserted near the center and it comes out clean you are done. Sprinkle the top with the reserved blueberries. Let stand 5 minutes. Serve with maple syrup, if desired.

A little cheese with your whine??
I hear a lot of people whining about the prices of entertaining this time of year. It can be especially hard when you are trying to go the organic route. But you can entertain at the same level as last year when you are buying organics if you just watch your pricing and go for the store brands, and the items that are on sale.
Going into the holiday season a lot of people are picking a few bottles of wine for dinners, and parties. So what would you recommend? The west coast has a variety of well priced wines that are sure to please all of your guests, and they are organic to boot. Oregon’s Ponzi Vineyards has a creamy textured Pinot Gris that is vibrant in ripe pear and fig flavors. This one is perfect for those holiday sauces and goes well with the rich dark meat turkey, pastured of course. This one goes for about $17 a bottle. Â Out of California the 2003 Full Circle Chardonnay is a nice pale yellow gold with apple notes and a little pear aroma. It’s a good tart, fruity taste, with a little warmth that is a surprising finish to such a low cost wine. This one runs about $8 a bottle. Â Washington state’s Badger Mountain 2007 Cabernet Sauvignon has no sulfites added, which I love!! Sorry. Not a sulfite girl. It’s forward blackberry and cherry aromas are complimented by wood spice and toast. It’s got the flavors of currant, blackberry, and black cherry framed by a really yummy vanilla and spice. Â And this goes for about $14 a bottle.
So don’t tell me you can’t entertain and stay green this holiday – because I’ll know it’s rubbish. And if you can try to stay close to home within a day’s travel at most. I’m sure there are organic wineries coming about all over the US, so you are sure to find one in your area that you will love.
