Chocolate Eggless Buckwheat Zucchini Cake

So I must say upfront – it needs the full cooking time. I put in a knife at 1hour and it was clean so I took it out. But it wasn’t cooked all of the way through on the bottom. I’ve got it back in the oven to crisp up – but I must say the mush tastes awfully yummy.

The recipe came from The Innocent Primate Vegan Blog.  I changed the ingredients up a bit.

Ingredients:

1 TBSP olive oil
3 C buckwheat flour
2 tsp ground cinnamon
1.5 tsp aluminum-free baking powder
1 tsp baking soda
1 tsp salt
1 large zucchini (about 3/4 lb, washed and stem removed)
1.5 C Doctor Grandma’s Delight sweetener
2 tbsp hemp powder with 4 tbsp water
1.5 C hemp oil
3 oz bittersweet baking chocolate, roughly chopped and melted on stovetop
1 tbsp of baking cocoa powder

The directions are at the blog, but I just threw it together and then baked. Now I should have followed the baking time, but I really wanted some darn cake. Right?? So make sure you follow the directions … click here.

So after sticking back in the oven and baking for about another 40 minutes (so yes it will take about one hour and forty minutes to cook) It was done, but still really moist. Almost like a pudding cake if you ask me. But let me say it is very good and really hit the chocolate craving on the head. It’s really good. So look past the moistness and just enjoy it.

Cookies and crumbs

Whenever I go without a treat for a few days I really start to feel like my life is lacking. I’m a sweet tooth just waiting for a sweet. Constantly. I need it – not want it – need it. So I try to find things that are healthy instead. First off yesterday I made some incredible Hemp Nut Chocolate Crunch Cookies.  My daughter said that they were the best cookies she has ever had. The recipe was very, very easy as well.

Ingredients:
1 organic egg (I only had egg whites the day I made them)
1 cup all natural hemp nut butter
1/2 tsp baking soda (forgot on first batch and they were more crispy)
1 cup hemp seeds
1/3 cup honey
1/3 cup of cocoa powder
Handful of chopped dark chocolate chunks
Directions:
1. Combine all the ingredients in a large mixing bowl.
2. Spoon out small ball size portions and with a fork, flatten onto a parchment papered cookie sheet.
3. Cook in the oven at 325°F until golden brown (about 8 – 10 minutes depending on the oven).
That’s it!
Enjoy!
So next time I think I’m going to try a borrowed recipe from Yoga Is Yummy.  I can’t do many bars from the store because I have so many allergies and because they are full of garbage. So what better than to make your own Yummy Nutri-Grain Bars? I  can’t wait to try them. I’m really excited because there are only seven ingredients – I am going to do either barley or spelt flour rather than a regular flour so I’ll share how they turn out. I am also thinking about using honey or agave as a replacement for the brown sugar, but we’ll see. In the mean time take a look and see if it’s a recipe you might enjoy for yourself. You will learn to love the Yoga Is Yummy blog as much as I do!
