Amazing Blueberry Shake
I love my green smoothies, and I LOVE blueberries – so what better than a blueberry shake. There are a couple of options on how you can make this shake, and is it AMAZING!!
Ingredients:
1 Cup Frozen blueberries (I prefer organic since you are eating the whole fruit)
1 Scoop of Tropical Shakeology or you can use my favorite Sprouted Brown Rice Protein by SunWarrior
1 package of Alkalinize** (or 1 tsp of Ormus Greens)
1/4 cup of So Delicious Plain Greek Coconut Yogurt
1/4 cup of Bob’s Steel Cut oats
2 tsp of fine ground flaxseeds
1 cup of ice
(add water as needed)
Blend the blueberries, Shakeology, yogurt and ice to your blender and blend for 1 – 2 minutes. Add remaining ingredient and blend for an additional 1 – 2 minutes. AMAZING!!! You will love it!!

Eating… what do you choose?

I know that so many of us struggle with what to eat – and it’s a back and forth game almost most of the time. Beans or no beans. Gluten-free or whole grains – or both. Paleo or Vegetarian? Well I’m glad that you can choose what works for you – and not even the Paleo groups are starting to share how to live Paleo with a vegetarian diet. One of the best starter cookbooks out there is ‘The Vegetarian Paleo Recipe Book which is a great little ebook I found on Amazon.

The Vegetarian Paleo Recipe Cookbook features 47 simple and tasty meals free from gluten, grains, dairy, soy and refined sugar starting with breakfast to lunch, dinner and dessert all are very important to me and being clean and free of soy is also very important to me.
Another great start would be to take the Whole30 Program from the Whole9 Group.
Here are a few Paleo vegetarian meal ideas to get you started on your Paleo journey that I found somewhere when I was looking for vegetarian options.
Wilted spinach surprise – Place a tablespoon of natural oil in a skillet. Sautee a 1/4 cup of sweet onions and sweet red peppers. Add ¼ cup of chopped walnuts, ½ cup of chopped apples. Heat for three minutes. Add a large amount of fresh spinach leaves with a small amount of natural oil. Inlcude any spices you desire. Allow the heat and the steam to wilt the spinach down. Stir and serve very hot.
Lettuce wrap fajitas – Cook a wide variety of peppers and onions in a skillet with a small amount of oil. You can have green peppers, red peppers, jalapenos, yellow, and orange peppers. Add garlic, cumin and chili powder for more flavor. When peppers are to your liking (shorter amount of time peppers will be crisper, longer amount of time they will be sweeter and soft), place a spoonful of peppers in your favorite lettuce leaves, roll up and enjoy!

Strawberry Shakeology Granola GF Oat Bars

4 scoops of Tropical Strawberry Shakeology
1 1/2 cups gluten-free oats
1 1/4 cup gluten-free granola (can do with almonds or without)
1 cup of coconut milk (or almond milk)
2 drops of cinnamon essential oil
1/2 tsp vanilla extract
1/2 cup of dried organic strawberries
Makes 9 Bars!! It’s the same amount of carbs (or lower) then something like one cup of yogurt…but loaded with nutrition. What would you rather have for a snack??

Eat To Live
When Dr. Oz has a patient that really needs to lose weight to save their lives, he sends them to the Dr. Fuhrman, the creator of the “Eat To Live” diet plan. Alanis Morissette lost 20lbs on Dr. Fuhrman’s plan. She also is a fan of two other of my favorite things: Kickboxing
and working with light weights like I do with Les Mills Pump
.
A big part of the diet is a salad every day, and this dressing is one of my favorites. It’s even great on a grain-based salad like quinoa with vegetables.
Put all into your Vitamix, food processor or blender:
1 bunch of cilantro, rinsed well, stems removed (just cut off the top with scissors)
4 stems of basil, rinsed, stems removed.
1 Tbsp Agave Nectar (to taste)
½ cup Rice Vinegar
¼ cup Red wine vinegar
2 Artichoke hearts or bottoms, diced (for thickening)
8 drops of Lime Essential Oil
Taste and adjust with more vinegar, agave or lime oil, and Himalayan sea salt to taste (optional).

Seven Day Starter Meal Plan for weight loss
Here is a seven-day diet plan for those of you that are struggling. Just mix and match meals that appeal to you from the selection below to meet your daily quota of 1,400 ish calories – and still stay satisfied. The ideas range from quick and easy to more sophisticated dishes.
Allowances per week (work these into your diet plan if you need them… but only if you need them.)
2 glasses of wine
1 chocolate bar
1 slice of cake
Breakfast
(You may include a glass of fruit juice diluted with 1/2 water with each option)
1.Reduced-sugar and reduced-sodiam beans with grilled mushrooms and tomatoes followed by a yogurt mixed with prunes or berries
2. 1 serving of baked summer fruits served with a yogurt, followed by a Wasa cracker with sliced apple. For the summer fruits bake raspberries,peach, strawberries and blackberries in a low oven for 30 minutes.
3. 1 bowl wheat flakes, topped with a handful of raisins and skimmed milk, followed by a glass of shakeology mixed with water, fresh strawberries and a chopped banana and ice.
4. 1 bowl unsweetened granola with skimmed milk, followed by a slice of multigrain rye crispbread topped with sliced fresh pineapple and reduced fat cottage cheese.
5. 1 bowl of oatmeal topped with fresh chopped strawberries, followed by a bowl of fruit salad.
6. 2 slices whole grain bread topped with reduced-fat cottage cheese and canned pineapple chunks, followed by a bowl of fruit salad mixed with granola.
7. Shakeology (or other meal replacment drink) mixed with milk, ice, strawberries and a handful of cashews. (or your favorite recipe or green smoothie)
Lunch
1. 1 portion of brown rice salad. Brown rice mixed with chickpeas, canned tomatoes, 1 tsp Worcestershire sauce, salt and pepper, a dash of Tabasco, a little diced onion, 1/2 clove garlic and 1 tbsp fresh basil
2. 1 bowl of canned potato and leek soup with a slice of French bread.
3. Veggie burger with lettuce, tomato, dressing, on bun served with baked yam.
4. 1 portion of rice noodles with mixed in mushrooms followed by mixed fruit salad. (I like to add in sliced carrots and sliced spring onions).You can add in some soya sauce (I use something else on this)
5. Whole grain spaghetti, served with tomato and garlic pasta sauce a little Parmesan cheese, followed by a small serving of rice pudding topped with fresh strawberries.
6. 1 bowl canned lentil soup with 1 plain toasted or untoasted bagel filled with hummus and grated carrots.
7. Pita bread stuffed with alfalfa sprouts, chopped cucumbers and juicy cherry tomatoes, laced it with vegan mayonnaise or vegan basil pesto. You can prepare these ingredients in advance the night before or in the morning before leaving for work. Just store them separately in air-tight containers and do the stuffing when you’re ready to eat. Pair it up nicely with a glass of unsweetened almond, hemp nut or rice milk.
Dinner
(Follow each option with a piece of fruit if you like)
1. Beetroot, fennel and lemon risotto with aubergine salad (mix in beetroot and fennel to your lemon risotto) served with 1 portion of grilled aubergine salad.
2. Ratatouille and baked potato
3. Rainbow Salad. (Make rainbow salad from mixing spinach, sunflower seeds, raisins, shredded apple, shredded beets, firm tofu and your favorite pasta cooked al dente. For dressing, mix 2 tbsp virgin coconut oil with 1 tbsp extra-virgin olive oil and 1 tbsp lemon juice.)
4. Leeks Braised with Wine and Garlic over whole grain pasta or quinoa.

5. Zesty Wheat Berry-Black Bean Chili (http://www.eatingwell.com/recipes/zesty_wheat_berry_black_bean_chili.html)
6. Beanburger pita pocket (1 grilled beanburger served inside a large wholegrain pita bread, stuffed with mixed salad leaves and topped with a tablespoon of low-fat Greek yogurt or veganaise flavoured with a squeeze of lime juice.)
7. Skillet Black Beans with Potatoes and Tortillas served with a great big green salad.

Purple Smoothie Delight for happiness
You want to know what my favorite smoothie is right now? It’s a version of Robyn Green Smoothie Girl’s Hot Pink Breakfast Smoothie. Why am I all about the healthy stuff??? I believe. Like I said in my last blog post. I believe. I think that if you follow the stuff below, you will be healthier, you will be in a place of opportunities and that you won’t spend your days thinking about all that you don’t have, but rather all that you do have… at least most of the time.

My happy right now is beets. One cup of raw beets is high in carbohydrates and low in fat. It contains phosphorus, sodium, magnesium, calcium, iron, and potassium, as well as fiber, vitamins A and C, niacin, and biotin. Beets contain folic acid, which is recommended for pregnant women because it may lower the risk of spina bifida and other neural tube defects in newborn infants. And long-term deficiencies have been linked to heart disease and cervical cancer, too.
Beets contain a wealth of fiber — half soluble and half insoluble. Both types play roles in fighting fat. These colorful root vegetables contain powerful nutrient compounds that help protect against heart disease, birth defects and certain cancers, especially colon cancer. Dr Ferenczi in Csoma hospital in Hungary has been using raw beets to cure cancer, and nothing else since the late 1950s.
So I share with you my delight… my happiness in a cup. It’s an amazingly creamy rich smoothie, and just what I need to pick up my spirits at any time of the day.
Purple Smoothie Delight – makes about 1 quart
1 c coconut water
1/2 cup coconut milk
1 large apple cut into pieces
1/4 of a medium beet, raw and peeled (you can freeze these for later use in smoothies)
1/4 c sacha inchi seeds (optional)
1/4 c chopped dates
1 tsp Ormus Greens
3/4 cup frozen blueberries
optional: 1-2 Tbsp flax seed or flax oil, protein powder, quinoa rejuvelac, kefir or yogurt
Place the ingredients, in order listed, into your Vitamix or other high power blender leaving out the blueberries and optional ingredients. Blend for 90 seconds. Add the blueberries and optional ingredients and blend on high until smooth.
