Vegicated
Take your average American that eats burgers, fats and ice cream, and give them veggies and almost exclusively vegan diet and see what happens. I am excited for this new documentary. Get away from the genetically modified as well and get the local, organic veggies. Fruits, veggies, seeds (allergic to nuts and most seeds so my seeds are hemp, flax, sacha inchi) and grains. I try to keep that as my main meals. Tell me what you think. First, let’s look at the interview:

I challenge you to go vegan for six weeks. Can you try it and just cleanse your body. I believe in you. See how you children feel after eating more fruits, less dairy. My daughter has been off dairy since September and the changes are amazing. We supplement with calcium, of course, because she is growing. But she doesn’t miss it very often. I think she’s missed the organic yogurt squeezers a few times, but that is the only thing she’s really missed. Want to give it a go?

Things to teach your daughter
Okay… I have a daughter. So this was the best blog post I have read in a while and I had to share it.

One of the best bits of advice was: Teach your daughter to like and respect herself and demand respect from those around her. She might end up lonely at times, but at least she won’t be a doormat.
One of the funniest bits of advice was: Don’t let your 9 year old dancer look like a 25 year Pussycat Doll.
But my favorite of all was: Teach your daughter that her choices in life are limitless. She really can do anything – except maybe use the Men’s Restroom. (although I have to admit … she can even do that! In fact my daughter and I used it at the pizza place just the other day with the Okay of the management.)

toxic world
I have read so many articles lately about the toxic conditions of our world. If you have taken my Holistic Food Basics free course you know all about the toxic foods in our diets. But you may not have stopped to think about the toxic conditions of your home or workplace. And that is just as important. Part of the organic lifestyle is to eliminate the toxins not just from your foods, but from your entire life.
First this last week I read an article by a nurse in the Seattle area. Five years ago Karen Bowman was invited to take part in the local Toxic-Free Legacy Coalition’s test of 10 Washingtonians to determine how many  everyday chemicals showed up in their bodies. Bowman tested and they found 35 in hers including flame retardants, mercury, lead, arsenic, DDT and the highest level of phthalates in the study. Phthalates are chemicals added to plastics to increase their flexibility and durability. All of these toxins have been found to contribute to learning disabilities, organ damage, cancer, harm to the reproductive system and the nervous system.
Now I’ve just read an article from ABC News on how household chemicals are sending women in to menopause early. And if you’ve worked with me as a woman you know that these are the things that are also making us more overweight in our 30′s than we ever have been. Â And if this is causing us to enter menopause earlier, it’s causing our daughters to develop at an earlier age as well. This cycle needs to be stopped.

doggies + tummies = Pineapple Poached Chicken
My little Laweenie (Labrador Weener Dog) has just been miserable. He started with a little tummy-ache, and it just continued into things I just can’t even write about. So I wanted to talk to all of you about the foods that can assist your doggies when they aren’t feeling well.
So the first thing is probiotics. I gave our dog, Oscar, a little pepto mixed with some organic yogurt. That started the process. A little more yogurt later on in the day offers him a great deal of tummy help. This can be very helpful because it contains those “good” bacteria, which can aid in digestion and help keep his digestive system clean and functioning properly.
Once we got the digestive issues tamed, I knew exactly what I had to do – and it was almost dinner time. So I got out the rice cooker and started with some Jasmine Brown Rice. Then I got out the organic pastured chicken breast and poached it for 30 minutes. To do this you want to place it in water just covered and bring to a boil. Then reduce the heat to a bare simmer so that only an occasional bubble breaks the surface. Let your chicken cook for another 15 to 20 minutes. The chicken breast and rice is perfect for your dog to get his or her system back on track. It’s a great meal (about the same size of food your would normally feed your dog) for a day or two. But for you and your family, you may want a little more flavor, so I had to make a Pineapple Sweet & Sour Sauce for our dinner.
Sauce Ingredients:
2 tbsp Sorghum Molasses
1 tsp of organic brown sugar
1 tbsp of organic ketchup (with no corn syrup)
1 tsp garlic powder
1 cup of fresh pineapple, diced

Directions:
1. Heat up small saute pan. Add sorghum molasses and stir until it breaks down.
2. Add ketchup, brown sugar and garlic powder and stir. Let cook about 1 minute.
3. Add pineapple and cook another 45 minutes.
4. Add chicken breast and pour over rice to serve.
Another thing you can do to help your dog along is to add a tbsp of pure pumpkin to their food over a number of days while your dog is getting back to normal. Once back to normal make sure you are feeding your dog the proper foods. Most regular store bought kibble contains lots of fillers that are just not good for your dog. The Honest Kitchen, Sojo Foods and Wellness Pet foods are some that I really like.

Apples, Oats and Your Immune System
I read an article recently by Dr. Weil (and who doesn’t love him!) titled, “Apples, Oats and Your Immune System.” In the article he shares new research from the University of Illinois found that soluble fiber can transform immune cells by increasing production of an anti-inflammatory protein, interleukin 4. In the study, laboratory mice were fed diets that were the same except for their fiber content – some received soluble fiber while the others consumed insoluble fiber. After six weeks, the researchers gave the mice injections that made them sick. Those on the diets including soluble fiber became half as sick as the animals on diets with the insoluble fiber; and the mice in the soluble fiber group recovered 50 percent faster.
Now the investigators want to study whether soluble fiber can help protect overweight people from the harmful inflammatory effects of a high fat diet. In addition to apples and oats, you can get soluble fiber from beans, peas, rice bran, barley, citrus fruits and strawberries. The University of Illinois study was published in the May 2010 issue of Brain, Behavior, and Immunity.
So that got me thinking. My daughter has gotten Fifth disease from preschool, so her immune system could use some boosting. And she’s a great eater – but does like her sweets a bit like mommy does. So I think I’ve found the perfect evening snack for her because a) it’s yummy tasting, b) it’s low in sugar and the sugars are all natural, c) anything with fiber will keep your belly full so you are going to sleep better and d) it’s all organic!! So what is this magically delic snack that my five year old loves? It’s Sprout Baby Food’s Oatmeal with Roasted Cinnamon Applesauce. The consistency is like a thick applesauce, like you pureed it yourself. And it’s really good. It only has 5 grams of sugar (and I try to keep that as our limit as much as possible) with 2 grams of Fiber and even has 1 gram of protein. It’s the perfect size snack and she thinks she’s getting a treat.
So – the next time you are feeling starved late a night, pick up a package of this and enjoy it. It’s only 70 calories. Get beyond the fact that it’s baby food…lol… because it’s good and it will help your immune system – who doesn’t need that? And – btw, who doesn’t want their kids to sleep through the night. Hooray!

Skillet Macaroni, Cheese and Bison meal
What kid doesn’t like Mac and Cheese – but it can be very full of yuck if made the old fashioned way. Here is our quick take on the skillet mac and cheese meal.
Ingredients:
- 1. lb. pastured ground bison (I know it’s more expensive. You can do grass-fed pastured beef or just suck it up since this meal goes a long way. Bison is leaner than turkey or chicken!)
- 2 pkg. organic whole wheat macaroni or organic spelt or rice macaroni
- 1 large can of Organic tomato juice with low sodium, or you can use 1 large can of crushed or pureed organic tomatoes
- 1 package Organic Valley Raw Cheddar cheese, cubed
- 1 large package of Organic part skim Mozzerella, cubed
- Organic Parmesan or Asiago cheese, grated (we like the 365 brand Asiago)
1. Preheat your oven to 375 degrees.
2. Brown your bison in a little EVOO
3. Add pasta into a pot of boiling water and boil, stirring occasionally, until al dente.
4.. Drain your pasta in a colander and pour it into a large ovenproof glass dish.
5. Stir together bison, pasta and cubed cheeses.
6. Shake can of tomato juice and then pour only enough juice over macaroni and cheese until almost covered.
7. Top your mixture with grated Parmessan and/or Asiago cheese.
8. Bake macaroni and cheese in middle of oven 25 to 30 minutes, or until golden on top and bubbling, and let stand 10 minutes before serving
Your kids will be delighted with this meal. It’s full of healthy omega’s and kids do need some brain food!

Pulled Pork Sandwich, the healthy way.
Some of the foods that you may love, are just not that healthy for you. But we’re going to help you change your eating by sharing some of our favorite foods, but far healthier for you. This is the year that you take the control back away from the big food corporations, and you start to control your own life.
One of my favorite foods is pork. And I’m not taking about just any old pork, I’m talking about healthy, free-range, humanely treated pork. Watch Food Inc. and you may never eat a big farm pig again after seeing how they kill them. It’s horrible. But pork can be healthy for you if raised properly. The trick to making our healthy pulled pork is also to trim the meat well and then skim any extra fat off the sauce after cooking it. I first found this recipe in the Eating Well magazine, and then I changed it to make it what I wanted. I recommend that you can always change up a recipe to make it better.
One reason I love this recipe is that you can make a lovely roasted pork tenderloin for dinner one night (about a 2 lb package), and use it for two meals. No reason to cook more than you have to, right?
Ingredients:
- 1 pounds pastured pork, tenderloin, trimmed and cut into 4 pieces
- 14 1/2 ounce(s) Organic canned tomatoes, diced (Low Sodium)
- 1/2 cup(s) Walla Walla onion(s), finely chopped
- 1/4 cup(s) Organic celery, finely chopped
- 1/4 cup(s) homemade barbecue sauce* (recipe below)
- 1 teaspoon garlic powder
- 1 teaspoon cumin, ground
- 6 sprouted hamburger buns, toasted
1. Combine first 7 ingredients in a medium saucepan over medium-high heat; bring to a boil. Cover, reduce heat, and simmer 55 minutes. Remove from heat. Remove pork from sauce; shred pork. Return pork to sauce.
2. Place about 1/3 cup pork mixture on bottom half of each bun; top with top halves of buns
You’ll need to have this bbq sauce created first – so here is our favorite sauce.
Ingredients:
- Olive Oil cooking spray
- 1/2 cup finely chopped walla walla onion
- 2Â cloves garlic, minced
- 2  tablespoon  tapioca starch (if very fine tapioca starch use 3 – 4 tbsps)
- 1/2 cup plus 1 tablespoon pure maple syrup
- 1/2 cup water
- 1/4 cup low-sodium beef broth
- 1/4 cup molasses
- 3 tablespoons cider vinegar
- 1 teaspoon dried crushed red pepper
- 1 teaspoon peeled, minced gingerroot
- 1/4 cup creamy hemp nut butter or almond butter
1. Coat a medium saucepan with cooking spray; place over medium heat until hot. Add onion and garlic; cook, stirring constantly, 3 minutes or until tender.
2. Combine tapioca starch and next 7 ingredients; stir well. Add to onion mixture; bring to a boil. Cook  about 3 minutes, stirring frequently.
3. Add nut butter; cook, stirring constantly, 2 minutes
This is going to be a favorite recipe to share with your family and friends. Kids love these sandwiches and you’ll love serving them.
