Strawberry Shakeology Granola GF Oat Bars

4 scoops of Tropical Strawberry Shakeology

1 1/2 cups gluten-free oats

1 1/4 cup gluten-free granola (can do with almonds or without)

1 cup of coconut milk (or almond milk)

2 drops of cinnamon essential oil

1/2 tsp vanilla extract

Chocolate Shakeology Peanut Butter Lollipops

You know what the holiday season does to me… I get bored and have to create. Lucky for you it’s almost always something with chocolate! And if you were looking for a yummy treat to share with your kids (or yourself for Valentine’s since it’s just around the corner) then how about a lollipop that is full of antioxidants, super dense whole food nutrition and probiotics??

Ingredients:

1½ cups peanut butter (hemp nut butter, cashew butter or almond butter)
2 cups Chocolate Shakeology
1 teaspoon vanilla extract
1 cup butter, divided in half
12 ounces semisweet chocolate chips

Directions:

1. Line a baking sheet with wax paper and place in the freezer.

2. Mix peanut butter, ½ cup butter, Shakeology, and vanilla. Remove frozen sheet. With hands form nickel-sized balls. Mixture will be stiff. Place balls on sheet and spear with a lollipop stick.

3. Once sheet is full place sheet back into the freezer and allow balls freeze while slowly melting together chocolate and ½ cup butter in a double boiler.

4. Remove balls from freezer and coat in chocolate as desired (you can do a full, ½ or ¾ dip) and replace onto waxed cookie sheet.

5. Freeze or refrigerate for 30 minutes or longer to allow chocolate to firm.

6. For storage, keep refrigerated.

Decadent Red Velvet Chocolate Chip Cupcakes

These are sure to be a hit at any event and with any friend you may have.

Ingredients:

1 1/2 c. Raw coconut crystals or organic sugar
2 1/2 c. organic all purpose flour
1 tsp. baking soda
1/4 tsp. sea salt
1 tsp. corn-free pure organic vanilla
1 can of organic pure pumpkin*
1 handful of Enjoy Life dairy-free, nut-free, soy-free chocolate chips
2 1/2 tsp Seelect – Red Food Coloring

* All canned pumpkin is different. You may need to add a little bit more flour if your canned pumpkin leaves your mix too runny. It should be a little bit less firm than the cake mix and pumpkin cookie dough.

Directions:

1. Mix all of your dry ingredients together.

2. Add in the pumpkin until blending fully.

3. Add vanilla and chocolate chips and mix well.

4. Heat oven to 350 degrees.

5. Spray unbleached parchment paper that is placed on a cookie sheet.

6. Use a tbsp and place cookies a few inches apart on paper.

7. Cook for 15 – 20 minutes depending on your altitude.

8. Enjoy while you can because these cookies disappear quickly.

Quick treat – Pumpkin Quinoa Ginger Muffins

I hate to bake sometimes because it does take a lot of time. And some days I need something sweet right now, not two hours from now. Enter one of my favorite quick treats, Pumpkin Quinoa Ginger Muffins.

These are so easy to make. They have Zero Fat, are full of good grains and wonderful proteins (156 calories each). A great start to your morning, or a special treat for your afternoon.

And believe me when I say these will disappear. I type this as my five year old is running for the pan yelling, “One last!”… to steal another one.

Ingredients:

Hodgson Mill Whole Wheat Gingerbread Mix
1 can 365 Organic Pure Pumpkin
1/2 container of single serving unsweetened organic applesauce
1 honey Chobani greek yogurt
1/3 cup of Organic Quinoa Flakes
handful of Enjoy Life Semi-sweet chocolate chips

Directions:

1. Mix all ingredients together.
2. Preheat oven at 350 degrees
3. Fill unbleached baking cups full (about an ice cream scoop size does it) – makes 14.
4. Cook for 35 minutes.

If you are staying away from gluten instead of the mix use:

3 1/2 cups of gluten free flour mix
1 tbsp molasses
1 tbsp cinnamon
1 tbsp ginger
1 tsp of clove seasoning
1 tsp baking soda
1 tsp xanthan
